    Making breakfast for your holiday guests, especially the morning after a big meal, can feel a little intimidating. With these delicious frittata recipes, however, breakfast for a crowd has never been easier. Pillowy eggs with cheese, fresh veggies and proteins come together for a shareable dish that everyone will love.     Spinach & Feta Frittata

    Think you don’t have time for a healthy breakfast? Think again. This simple spinach-and-feta frittata is easy to pull together, needing only 3 minutes on the stovetop before finishing in the oven. It’s easy to modify by adding your favorite veggies to the mix before you pop it in the oven. Try adding chopped tomato, or swapping the wilted spinach for arugula or kale. Frittatas reheat beautifully. If you have leftovers, reheat them for 30 seconds in the microwave or until warm.

    Roasted Poblano & Pepper-Jack Frittata

    Serve this healthy frittata for breakfast or brunch. Roasted poblanos bring heat to the dish, while shallots provide a touch of sweetness. We like pepper Jack cheese in this frittata, but you could easily substitute your favorite shredded cheese.

    This vegan chickpea frittata is a delicious breakfast or dinner that is loaded with veggies. Made with chickpea flour, nutritional yeast and plenty of spices, this dish doesn’t skimp on flavor.

    This potato frittata is packed with fresh herbs and vegetables. Dill havarti adds a creamy, mild flavor to the dish. The frittata releases easily from the cast-iron pan, revealing a savory crust on the bottom that adds flavor and texture.
