    Why It Works

    Kalinti is a humble but beloved street food throughout northern Morocco and Algeria. Made with chickpea flour, water, oil, and salt, it bakes into a golden, crisp-topped pie with a soft, almost wobbly, custard-like center. Vendors cut warm wedges straight from wide trays to be eaten on the go, and one of the most iconic ways to enjoy it is as a sandwich: a fresh baguette split open, spread with fiery harissa, filled with a slab of kalinti, and dusted with earthy cumin. I have so many memories of eating it this way during family trips to Tangier—the contrast between the crisp bread, spiced heat, and soft, custardy filling has always made it deeply satisfying to me.

    In Algeria, the dish is just as beloved, though it goes by different names. In Algiers it’s known as garantita, while in Oran and other regions you’ll hear karantika or kalentika. Whatever it’s called, it’s eaten much the same way as in Morocco: sliced hot, tucked into bread, and seasoned with cumin and harissa. 

    Kalinti is part of a broader Mediterranean family of chickpea-flour bakes. In Gibraltar, a similar dish called calentita is made with nearly the same ingredients—chickpea flour, water, olive oil, and salt—but is typically milder, and eaten plain rather than spiced or served in a sandwich. In Italy, Liguria is known for farinata and Tuscany for cecina, thinner, crisper expressions of the same simple, oven-baked batter.

    The North African version likely has roots in the Iberian Peninsula, reflecting centuries of Spanish presence in North Africa. Its name comes from caliente, the Spanish word for “hot”—a nod to the way it’s eaten straight from the oven. Over time, Morocco and Algeria made it their own.

    The batter for kalinti comes together in minutes. Whisking the chickpea flour with cold water slows starch hydration, giving you time to smooth out any lumps, resulting in a silky batter and tender, custard-like texture once baked. A bit of olive oil and an egg enrich the batter and help it set. The pan is brushed with oil and preheated before the batter is added, making the oil shimmering hot. This kick-starts browning and helps form a thin, crisp crust while the center stays creamy. The recipe is straightforward, but because heat cycles in ovens can vary, it’s important to keep a close eye on the pie and remove it when the center still looks jiggly. It will firm up as it cools, so trust the process and keep in mind that overbaking will make it tough and less enjoyable to eat. At home, I like to serve kalinti alongside a simple, peppery arugula salad tossed with lemon juice and olive oil to balance the richness. For a sandwich version, tuck a warm slice of kalinti and some salad into a crusty baguette with some harissa. Whether eaten on the street or at home, kalinti’s appeal lies in how a few pantry ingredients become something golden, creamy, and comforting, especially when finished with a warm dusting of cumin and paprika or cayenne.
