    One of my favorite ways to use up summer tomatoes is with this easy tomato bruschetta recipe—perfect as a simple appetizer or side dish.

    Tomato Bruschetta

    If you’re looking for a fresh, flavorful way to enjoy ripe summer tomatoes, this easy tomato bruschetta recipe is a must-try. Juicy tomatoes are tossed with garlic, olive oil, red onion, balsamic and fresh basil, then spooned over toasted crusty bread for the perfect bite. It’s quick to make, requires just a handful of ingredients, and works beautifully as an appetizer, light lunch, or side dish for pasta, grilled meats, or seafood. It’s one of the best ways to use fresh summer tomatoes!

    We’ve been making this tomato bruschetta every summer for years to use up garden tomatoes, and it’s a family favorite at backyard dinners and cookouts. Here’s why you need to make it with your summer tomatoes!

    • Fresh, simple ingredients – Ripe tomatoes, fragrant basil, and good-quality olive oil deliver big flavor with minimal effort.
    • Perfect texture – Toasted garlic-rubbed bread stays crisp while the marinated tomato mixture stays juicy and refreshing.
    • Balanced temperatures – Warm bread paired with cool topping makes every bite satisfying.
    • Make-ahead friendly – The tomato mixture can be prepped ahead, then spooned on just before serving for the best texture.

    How to Make Bruschetta

    Making bruschetta at home is quick and easy. Here’s how:

    Marinate the tomatoes

    Toast the bread

    Rub with garlic and serve and serve

    • Assemble and serve – Spoon the tomato mixture over the bread just before serving so it stays crisp. Drizzle with a little more olive oil or balsamic glaze if desired.
    • Prep the tomatoes – Dice fresh, ripe tomatoes and toss them with olive oil, balsamic, red onion, minced garlic, fresh basil, salt, and pepper. Let the mixture sit for 10–15 minutes so the flavors meld.
    • Toast the bread – Slice a baguette or Italian bread and brush each side lightly with olive oil. Toast in the oven or grill until golden and crisp on the outside but still chewy inside.
    • Rub with garlic – For extra flavor, gently rub the warm toast with a cut clove of garlic.

    How To Eat

    No one wants a soggy bruschetta—the key is in that perfect contrast between the crispy, toasted exterior and the chewy bread inside, topped with cool, juicy tomato mixture. For the best texture, serve the bread freshly toasted (or grilled for a nice char) and the tomato topping at room temperature or chilled. Assemble just before serving so every bite stays fresh and crisp.

    Make Ahead Tip

    You can make the tomato salad up to a day ahead and keep it in the fridge to really let the all the flavors combine. Then when the time comes, all that’s needed to do is cut and toast your bread, and voila!

    Cook Mode

    • Combine tomatoes, chopped garlic, red onion, vinegar, oil, salt, pepper, and basil. Set aside to let the flavors meld 10 minutes.

    • Slice bread into 1/2 inch thick slices.

    • Place on a tray and spray lightly with olive oil.

    • Toast bread under broiler, until golden, watching closely not to let it burn.

    • When bread is toasted, rub each piece with whole garlic clove.

    • Place bread on a platter and top with tomato mixture.

    • Serve immediately so the bread doesn’t become soggy or serve on the side.
