    Baked in a mini muffin pan, these chocolaty No-Added-Sugar Sweet Potato Brownie Bites are easy to portion for a sweet dessert throughout the week. Mashed sweet potato and Medjool dates stand in for any added sugars and create the ideal balance of sweetness. Plus the sweet potato adds fiber for a snack that will satisfy, while the dates have anti-inflammatory properties. Read on for tips and tricks on how to make, store and serve these brownie bites for the best texture and flavor every time. 

    Tips from the EatingWell Test Kitchen

    These are the key tips we learned while developing and testing this recipe in our Test Kitchen to make sure it works, tastes great and is good for you too! 

    • We love the ease of the microwave to cook sweet potatoes, but if you have some extra time, try baking the sweet potato in the oven instead. It concentrates its natural sweetness and gives the brownie bites a richer, more caramelized taste.
    • These bites firm up as they cool. Pull them from the oven when the tops look set but still slightly soft in the center for that perfect brownie-like chew.
    • If you are storing the brownie bites, let them cool completely. This prevents condensation (and sogginess) in the storage containers.

    Nutrition Notes

    • Sweet potatoes are naturally sweet thanks to their starchy tuber roots. That orange color comes from high amounts of vitamin A in the form of beta-carotene that supports heart and eye health. The fiber in sweet potatoes can help support heart and gut health as well as making these brownie bites a satisfying and filling snack. 
    • Medjool dates are high in fiber for better heart and gut health. You’re also getting anti-inflammatory polyphenols for vascular and cell health. Their natural caramel-like flavor adds sweetness without the need for added sugars.   
    • Unsweetened cocoa powder is an antioxidant-rich ingredient. The flavonoids and polyphenols found in the cacao used to make cocoa powder have been linked to better heart and brain health. Magnesium is another key nutrient found in cacao that supports several functions in the body including supporting energy, heart health and blood sugar management.
